Wellness Wednesday! (What’s For Lunch?)

I made the mistake of watching Rachel Ray’s show yesterday. After the first fifteen minutes of watching her make a balsamic vinaigrette caprese sammie I had to have one! So, when we went grocery shopping yesterday we got some of the ingredients to try and make it work with what we had. Needless to say, they were amazing and not to unhealthy either! The recipe is below for you to enjoy. As you can tell by the photos, we didn’t follow the directions completely. But, they were still good. The recipe serves 4!


-8 slices ripe tomato

– 1/3 cup balsamic vinegar

-3 tbspn extra virgin olive oil

-2 large cloves of garlic

-2 sprigs fresh rosemary, finely chopped

-1 tspn dried oregano

-1/2 tspn crushed red pepper flakes

-4 6 oz pieces boneless, skinless chicken breast

-1 tbspn grill seasoning, such as montreal steak seasoning

– 8 1/4 inch thick slices smoked mozarella

-1 cup baby arugula

-1 cup loosely packed basil

-4 ciabatta rolls, split


-Pre-heat oven to 425

-Arrange tomatoes on a cooling rack in a baking sheet and roast 20 minutes

-Combine balsamic, olive oil, garlic, rosemary, oregano and red pepper in large plastic food storage bag or shallow dish. Set chicken into marinade and let stand 20 minutes.

-Heat grill pan to medium-high heat. Shake excess marinade off chicken and place on grill. Season with grill seasoning blend. Grill chicken 5-6 minutes on each side.

( We used this possum grill seasoning that Kyle’s dad’s friend makes. He’s great and also does salsas as well as other things)

-Combine arugula and basil, and pile onto roll bottoms. Top greens with a piece of chicken, 2 pieces of chicken, 2 pieces of cheese and a couple of oven-roasted tomatoes.

On a side note: I haven’t bought ground coffee in years. But, our grinder is in storage so, I got this coffee at the store yesterday for $2.00. I know it’s cheap and not amazing, but I just feel cool cause it’s in the can. I hope they don’t stop making it like this.

  1. That canned coffee is looking legit, SJ. And I would love to even have the vegetarian version of this sandwich because it looks AMAZING. I may have to try that soon!
